Baked Oatmeal

A new favorite!



Baked Oatmeal

Ingredients:

3 cups oatmeal
1/2 cup brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder 
1 teaspoon salt
1 cup skim milk
2 eggs
1 cup unsweetened applesauce
2 teaspoons vanilla
3/4 cup raisins, dried cranberries or prunes 


Directions: 

Preheat oven to 350 degrees.
Combine dry ingredients in mixing bowl. Beat in eggs, applesauce and vanilla. Stir in dry fruit.
Pour into 9X13 pan, bake for 40 minutes. 
 

The best part? 
The left-overs taste like cake!

I love baked oatmeal! Tate and I have had it for breakfast on Mondays for as long as I can remember. My recipe is slightly different from yours, we make it in a pie plate and pour warm cinnamon milk over it...yum....one of my most favorite breakfasts!
