Cheddar Chowder

One of my favorite comfort foods....

Cheddar Chowder


2 cups boiling water
2 cups diced potatoes
2 cups chopped carrots
1/2 cup chopped celery
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1/4 cup butter
4 cups milk (If you like really cheesy soup, cut milk in half)
2 cups velveeta cheese diced
1 cup ham or crisp bacon

Simmer potatoes, carrots, celery, salt and pepper for 10 minutes.  Add flour to melted butter, stir until smooth. Add flour mixture to vegetables, stir until you think all the lumps are out.  Add milk and cheese stirring gently until cheese is melted.  Add in ham or bacon.  DO NOT BOIL after you add the milk & cheese!
