Ingredients:
2 eggs
1 cup shortening
2 cups sugar
2 cups raisins
1 cup nuts
2 cups oatmeal
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda dissolved in 1 Tablespoon hot water.
Directions:
Cream eggs, shortening and sugar. Stir in rest of ingredients. Drop by teaspoon on greased baking sheet.
Bake at 350 degrees for 10-12 minutes.
This is my basic recipe. A few variations I make depending on my mood, and what I have in the cabinet are:
*instead of 2 cups white sugar, I'll do 1 white and 1 brown.
* substitute chocolate chips in place of raisins, or leave them out all together.
*I don't like nuts in my cookies. I never put them in.
*I use whole wheat flour instead of all purpose. (makes dough a little drier)
*roll in powdered sugar before baking.
