Red Velvet Cake


Aunt Pam's
Red Velvet Cake
Ingredients:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 ounces red food color
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon soda dissolved in 1 Tablespoon vinegar
1 cup buttermilk
2 1/2 cups cake flour

Frosting:
5 tablespoons flour
1 cup milk
1/2 cup crisco
1/2 cup margarine
1 cup sugar
1/2 teaspoon vanilla

Directions:
Cream shortening, sugar and eggs. Mix in food coloring, vanilla, salt and soda/vinegar mixture. Alternately add buttermilk and cake flour. Pour batter into lightly greased pan, bake at 350 degrees for 30-40  minutes, or until toothpick comes out clean. Makes 1 9x13 or 2 8" rounds.

Frosting Directions:
Over medium heat, make a paste with the flour and milk. While paste is cooling, blend remaining ingredients. When paste is lukewarm, beat into other ingredients.

*Aunt Pam is brings this to our family Christmas every year.
*I made my own cake flour! I followed her directions.
*I substitute whatever store-brand shortening I have for the crisco.
*I use butter instead of margarine.
* I use my Kitchen Aid Mixer for the frosting-the longer you beat it, the lighter and fluffier it gets!
*I was going to make this for St. Patrick's Day- never got it done. I made it for Easter...only had one ounce of green food coloring-substituted water for the other ounce. Can you imagine if I used that much more?!

Funny! I made red velvet cake a few weeks ago. I didn't have a recipe, so followed one from the internet. It was awful! For book group we're reading a book about Brothels in Chicago in the 1900's - I thought red velvet cake would be fitting. I'll make this one next time instead! (Red though...not so sure about green...)
